We’re pretty familiar with the trio of Citra, Galaxy and Simcoe at this point here at Polly’s – so much so that they’re probably firmly set in stone as foundation hops that have helped build us to where we are today as an eight year old brewery. How do you breathe new life into a combo that has carried us through such a long period of time though? Tap into the resources you have, and sweet talk your hop merchant is what you do! Break on Through brings the usual T90 punch from Citra and Galaxy, but with a flourish of Cryo Simcoe – a potent and concentrated version of one of our favourite hops, bringing a fruit salad of bright guava, pineapple and passionfruit, with soft notes of apricot and peach, before balancing with a resinous bitterness.
