Framboise style sour with Scottish TayberriesInspired by the Belgian Framboise style, we refermented our base golden sour beer on 250g/l Scottish Tayberries harvested within 12 miles of the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee, where these berries were first bred.Brewed with golden promise pale malt, wheat, locally grown oats. Fermented for three months with Brettanomyces and soured with our house culture. Whilst a framboise style is traditionally brewed with raspberries, we decided to use our local tayberries to showcase their intense raspberry character, vibrant pinkish red hue and huge aromaUNTAPPD SCORE AWAITING SCOREbr>

HOLY GOAT -Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers.
We have taken an unconventional approach to yeast and fermentation, opting for a proprietary method that utilises Brettanomyces yeast for long maturation times (typically 3-4 months) to produce unique, complex, full-flavoured sour beer.
Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.
Inspired by tradition, we also seek to pay homage to our brewing forbears, mixing old and new techniques with the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!
The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.
