Blended Golden Sour with ApricotsSunsmasher is a golden sour beer fermented with Brettanomyces and aged on 250g/l Apricots. Blended from three different batches of base beer, all of which were brewed with local barley, wheat and oats. Of the three batches, two were completely unhopped providing deep citrus/peach acidity and subtle funk, whilst the third batch was lightly hopped, producing more intense tropical funk with a restrained acidity.The resulting blend holds a good balance of these characteristics producing juicy tropical, stone fruit and citrus characters which complements the hefty addition of apricot.UNTAPPD SCORE AWAITING SCOREbr>

HOLY GOAT -Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers.
We have taken an unconventional approach to yeast and fermentation, opting for a proprietary method that utilises Brettanomyces yeast for long maturation times (typically 3-4 months) to produce unique, complex, full-flavoured sour beer.
Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.
Inspired by tradition, we also seek to pay homage to our brewing forbears, mixing old and new techniques with the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!
The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.
